Ingredients:
1 cup buckwheat flour
1 cup all-purpose flour
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon baking soda
1 1/2 cups buttermilk
1/2 cup sour cream
1 large egg
2 tablespoons melted butter
1/2 cup crème fraîche
2 ounces black caviar
Fresh dill for garnish
Instructions:
In a bowl, mix the buckwheat flour, all-purpose flour, sugar, salt, and baking soda.
In another bowl, combine buttermilk, sour cream, egg, and melted butter.
Mix wet and dry ingredients until smooth.
Heat a non-stick skillet over medium heat and lightly butter it.
Drop small spoonfuls of batter onto the skillet to form mini blinis.
Cook until bubbles form on the surface, then flip and cook until golden brown.
Top each blini with a dollop of crème fraîche, a small spoonful of caviar, and garnish with dill.
